Clean Chocolate Cupcakes
Without question, these clean chocolate cupcakes are the best healthy cupcakes I have ever tasted or made in my life. They might even be more delicious than a real cupcake.
In a moment of weakness, I decided I needed a healthy treat. After looking at a couple different recipes and wanting to use clean ingredients, I threw in a bunch of random ingredients into the blender and *POOF!* The most magical clean chocolate cupcakes were born – I really don’t know how that happened.
They’re full of great ingredients and super simple to make. It took a couple minutes to pull them together, making them a winning recipe for any busy mom’s schedule! And, I’m not even kidding, they are better than regular sugary cupcakes… you are going to love them!
Clean Chocolate Cupcakes
Prep time: 5 minutes
Cooking time: 15 – 18 minutes
Makes 12 mini muffins or 6 regular ones
Ingredients:
1 medium sized very ripe peeled bananas
1 whole medium apple, peeled, cored and chopped
5 – 6 dates
2 large eggs
1 cup almond butter
1/4 cup cocoa powder
1 1/4 Tsp. baking soda
1 Tsp. cinnamon
Pinch of sea salt
Cupcake liners
Directions
Preheat your oven to 375°F.
Place all ingredients in your blender. Blend on high for approx. 2 minutes to form a nice batter.
Fill your cupcake liners 3/4 full.
Place in the oven and bake for 15 – 18 minutes. (Check after 15 minutes. The tops should be firmer to the touch, puffed up similar to a soufflé. They may need 18 minutes.)
Let cool on a wire rack.
Store in an airtight container for three days – if they manage to last that long.
Opted to bake six larger cupcakes? Please increase the cooking time to 20 – 25 minutes.

I made these for my sister – n -law who was on day 21 of the whole 30 meal plan. They turned out with an excellent texture and very moist. They are not as sweet but satisfying. Unfortunately my sister -n-law could not eat them due to the 3 g sugar in the almond butter! Can you find almond butter without sugar?
Great question, Wendy! Have you considered making your own? There are some recipes out there that only require a good blender and almonds.
