A Special Luncheon for Mom
With Mother’s Day right around the corner, I wanted to give you a little entertaining inspiration in case you’re planning a lovely afternoon tea to celebrate the amazing women we call “mom” in your life. Or maybe you want a reason to gather your girlfriends for a relaxed afternoon complete with simple yet elevated snacks and a gorgeous setting. No matter what kind of spring entertaining you have planned, we have a few sweet ways to make your table special. Don’t be overwhelmed by it either. Simple touches, homemade floral posies, and easy recipes can come together and make a gorgeous tablescape that your mom will love!
When I think about entertaining in Spring, I like to think light and sweet. Delicate colors, fresh flavors. A delicious berry trifle- so easy to make! Including the quintessential spring tea snack: cucumber sandwiches. These food items are relatively quick and easy to prepare and look amazing on the table! Add a little micro-greens to elevate your presentation or tie a simple ribbon around your baked goods too!
Again, think of a simple setting with elevated additions! I love these white plates with a sweet gold trim we found over at Bed Bath & Beyond. We are loving their Olivia & Oliver collection that adds just the right touch of elegance to elevate your table. A refreshing cocktail (or mocktail, in my case).
Strawberry Shortcake Trifle Recipe
We love this perfect glass trifle bowl from Bed Bath and Beyond. This is so simple to whip up. Choose to make what you would like or use store-bought ingredients to help out with the prep time.
Ingredients
White Cake (We like a mix of pound cake and angel food cake.)
Whipped Cream
Pastry Cream if desired
Fresh Berries
Sugar
Vanilla Bean
We like to cut up the berries, sprinkle them with a little bit of sugar and vanilla, and let them sit for a couple minutes. Simply cut up the cake into large chunks and start to layer as you see fit by alternating the pastry cream, whipped cream, cake and berries. It’s best to let it sit for a couple hours before serving.
Cucumber Sandwiches
So simple, so pretty and so refreshing. It’s the perfect little tea sandwich for Mothers’ Day to help alleviate all the sweets on the table. Hahaha.
Ingredients
White or Brown Bread (Crust removed)
Fresh English Cucumbers
Cream Cheese (at room temperature)
Fresh Dill
Lemon Juice and Zest
Salt and Pepper
Simply soften the cream cheese, add a pinch of salt, pepper, and some fresh chopped dill followed by a little bit of lemon juice and zest to brighten it up. We like to peel our cucumbers but you can choose to keep the peel or do a mix of both. Spread little bit of cream cheese spread on both sides of the bread and then layer it with cucumber. Perfection!

Yes we have some water with flowers that are edible would be lovely to use lilacs at this time of year as they are edible, lavender works well too and you can add in a sparkling water as well!
