One of my favourite quick meals for fall is a warm quesadilla, but not your typical Mexican quesadilla. Rather a cozy and yummy version for fall. I’ve partnered with my favourite tortilla brand Dempster’s™, creating a super easy and quick recipe to make your fall days not only cozy, but also delicious! Making a delicious quesadilla with Dempster’s™ is as easy as top, fold and heat! 

Bringing together my favourite food ingredients for fall: Top with Brie cheese, fig jam and rotisserie chicken. Fold in an Ancient Grains Tortilla and heat!

Absolutely delicious! Always fresh and soft, Dempster’s™ tortillas are the key ingredient to a delicious fall quesadilla.  Hope you enjoy this quick and easy recipe as much as my family did!

Fall Quesadilla
Prep time: 10 minutes
Cooking time: 15 minutes
Serves 4 people

Ingredients
2 ½ cups shredded cooked chicken (You can always use store-bought roasted chicken to save some time.)
8 oz. Brie cheese thinly sliced (You could always use grated white cheddar if you didn’t have Brie)
1 apple cored and thinly sliced (I love honey crisp, but granny smith would also work well!)
4–5 tbsp. fig jam
4 large ancient grain Dempsters tortillas

Directions
Preheat your oven to 375°F and line a baking sheet with parchment paper. Start by making sure all your ingredients are sliced and ready to go

In a large non-stick skillet over medium heat, place your tortilla and spread about 1 tbsp. of fig jam on half of the tortilla. Top with a ¼ of each remaining ingredient and fold over the tortilla, press down with a spatula. Cook for 1–2 minutes on each side until golden brown and the cheese has melted.

Remove from the skillet and place on the lined baking sheet in the oven. (This will keep them nice and crispy and warm while you make the others.)

Repeat this step with the three remaining tortillas. Cut each quesadilla up into 4 pieces. Serve and enjoy!
