Caramel Apple Cream Cheese Galette
If you love a traditional fall home made apple pie then you’re going to love our Caramel Apple Cream Cheese Galette. Combing two classic recipes together, apple pie and cheesecake creating a delicious comforting treat with layers of thinly sliced apples on a cream cheese base. I honesty can say this dessert is easier to make than a traditional pie, or even cheese cake for that matter. It absolutely doesn’t have to be perfect when creating this idyllic galette. The aroma of cinnamon and vanilla will fill your home as it’s crust bakes to a golden brown. Top off with our salted caramel sauce and a scoop of vanilla ice-cream and enjoy!
Caramel Apple Cream Cheese Galette
Serves 6-8
Prep Time: 20 minutes
Inactive Time: 30 minutes
Bake Time: 45 minutes
Crust
1 ½ cups all purpose flour
2 tbsp granulated sugar
1 tsp cinnamon
½ cup unsalted Canadian butter, cold and cut into 1” cubes
4-6 tbsp ice cold water
Cream Cheese Filling
6 oz cream cheese, softened
¼ cup granulated sugar
½ of 1 large egg at room temperature
1 tsp vanilla
Apple Filling
2 apples peeled and sliced
2 tbsp brown sugar
1 tbsp cornstarch
Juice of half of a lemon
1 tsp cinnamon
1 tsp vanilla extract
½ of an egg for egg wash
Sugar and Cinnamon for topping
Salted Caramel Sauce
½ cup granulated sugar
1 ¼ cups of whipping cream Canadian dairy
3 tbsp salted butter
Sea salt to taste
Preparation
1. In a large bowl, combine the flour, sugar and cinnamon. Add in the butter and toss around to coat. Using a pastry blender, cut in the butter until large pea sized pieces are formed.
2. Add 4 tbsp of ice cold water and bring the dough together. Add 1 tbsp of water at a time if needed. The dough should come together and not be too dry.
3. Flatten the dough into a disk and wrap in plastic and chill for 30 minutes.
4. For the cream cheese filling use the paddle attachment on your stand or handheld mixer. Cream together the cream cheese and sugar until smooth. Add in the egg and vanilla and mix until combined, set aside.
5. For the apple filling, place the sliced apples in a large bowl, add in the brown sugar, cornstarch, lemon juice, vanilla and cinnamon. Mix well to combine. Set aside.
6. Preheat your oven to 375F. Line a baking sheet with parchment paper and set aside.
7. On a lightly floured surface, roll out your disk of dough to a large circle about ¼ inch thick and place on the prepared baking sheet. (See above photos)
8. Spread the cream cheese mixture onto your dough, leaving a 1 inch border around the edge. Arrange the apples on tip of the cream cheese as desired.
9. Fold the edges of your dough over the apple slices.
10. Once folded around, brush the edges of the dough with egg wash and sprinkle with sugar and cinnamon.
11. Place the galette in the freezer for 10-15 minutes to firm up.
12. Bake in the oven for 45-50 minutes until the edges are golden brown.
13. Let cool slightly before serving.
Caramel Sauce
1. Gently warm the cream and set aside.
2. Place the sugar, corn syrup and water in a medium sized heavy bottomed saucepan. Cook until a medium amber color is formed, remove from the heat and slowly add in the warm cream. If there is still some hard sugar on the bottom, put it back on the heat gently until completely smooth.
3. Remove from the heat and whisk in the butter, vanilla and sea salt. Let cool.
Serve warm with a dollop of ice cream if desired!
The Apple Galette will keep for 2-3 days in an airtight container. The Caramel Sauce will keep for 1 week in the fridge.
