Market Salad with Lemon Basil Dressing
I promise you when I say that this will surely be your go-to summer salad!! Two words, fresh and delicious. The flavourful bright basil vinaigrette pairs perfectly with summer fruits and vegetables, tossed along with our all-time favourite Baby Kale Blend from Fresh Attitude. I always love baby kale in the mix, which is an added bonus since it’s high in antioxidants and an obvious superfood, and their salad is pre-washed which is such a bonus. Crisp greens make the base and main focus of this salad, so having a mixture of great tasting greens that are grown locally in the Okanagan is such a plus. I added in watermelon radishes for a burst of color and flavour. Sliced cucumber for that added crunch, small heirloom cherry tomatoes and a sweet peaches for a summer twist. You’ll love this salad for a last minute dinner or beautiful enough to prepare when you’re hosting friends and family. This is sure to be a repeat in your repertoire this summer. Why not add in some grilled chicken for an added dose of protein too.
MH TIP: a fun way to elevate the butter for your bread is to simply chop up some fresh chives, mix into the butter and top with a sprinkle of sea salt!
Serves 4-6
Prep Time 10 minutes
Ingredients
Lemon Honey Basil Vinaigrette
½ cup fresh squeezed lemon juice
½ cup extra virgin olive oil
¾ cup fresh basil leaves
¼ cup of water
2 Tbsp mild honey
1 teaspoon dijon mustard
Sea Salt and freshly ground black pepper
For the Salad
8 cups Fresh Attitude Baby Kale Blend
2-3 watermelon radishes, sliced
1 English cucumber, sliced
1 pint of small heirloom cherry tomatoes, halved
2 peaches, sliced
( Feel free to use the fresh fruit and vegetables you have on hand!)
Preparation
1. In your high-speed blender or food processor place all the ingredients for the dressing, blend on high for 1-2 minutes until the basil is completely broken down and you obtain a creamy dressing.
2. Place in an airtight container until ready to use.
3. Slice all of the desired vegetables for your salad, mix with 8 cups of greens and dress the salad with the vinaigrette as desired.
4. Serve immediately.
5. You can make individual salads as well, the vinaigrette will keep in an airtight container in the fridge for up to 3 days, just give it a good mix before the next use.
