We don’t know about you but “New Year, New Me” is super motivating, yet a tad bit overwhelming this January!  We love any opportunity to take stock and reflect on new ways and stronger motivations to reach our goals. But at the start of the new year we can tire ourselves out by trying to do too much at once.  That’s why we love easy steps that we can incorporate into our every day lives!

That’s why we created this delicious and easy recipe for you, “The Eat Your Greens Sandwich”!  By using all the fresh green ingredients and including Dempster’s 100% Whole Grain Quinoa Bread, this is a healthier lunch choice you can feel good about!

We love Pink Himalayan salt as it has so many wonderful health benefits, including boosting metabolism and decreasing inflammation! We catch ourselves sprinkling it on everything.

Feel free to add in any veggies that you have that you want to use up. This could be made vegan by using a vegan cream cheese substitute.

Prep time: 5 minutes
Makes 4 sandwiches

For sandwich:
Dempster’s 100% Whole Grains Ancient Grains with Quinoa Bread
Alfalfa or broccoli sprouts
Baby kale or arugula
Red onion

For spread:
½ cup cream cheese softened at room temperature
2 sprigs of chopped green onions
A small bunch of fresh flat leaf parsley, chopped
Juice of half a lemon
2 tbsp. hot sauce (add more or less depending on your spice tolerance)
Pinch of Pink Himalayan salt
Pinch of pepper

For the spread, combine all of the ingredients in a bowl. Mix well and set aside.

Slice the cucumber lengthwise. Pit the avocado and slice.

Build your sandwich by layering the cream cheese spread on the Dempster’s 100% Whole Grains Ancient Grains with Quinoa Bread and layer up with all of your green veggies. Enjoy!
